I found a very highly rated recipe from Allrecipes.com and got to work! I decided to make a half recipe since I only had half a bag of chocolate chips. However, I soon realized I was missing some key ingredients (whoops!) so I made up a different recipe on the spot. I basically simplified the recipe I had been using and added hot chocolate mix in hopes of filling in for the lack of brown sugar. The cookies turned out to be super delicious so I thought I would share my DIY improvised recipe.

Hot Cocoa Chocolate Chip Cookies Recipe (Makes about 18 big cookies)
- 1/2 cup (4oz or 1 stick) of softened butter
- 3/4 cup white sugar
- 1/4 cup instant hot cocoa mix (I used Swiss Mix Milk Chocolate Hot Cocoa)
- 1 egg
- 1 teaspoon vanilla extract
- 1.5 cups whole wheat flour (or all-purpose flour)
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup of semisweet chocolate chips
Baking Instructions
- Preheat oven to 350 degrees F (175 degrees C).
- In large bowl mix butter, sugar, and hot cocoa. Mix in egg, vanilla, baking soda, and salt. Then add flour and chocolate chips.
- Use a big spoon and make large roundish cookie dough blobs.
- Bake for 12 minutes for soft gooey cookies, and about 15 minutes for slightly more crisp cookies.
- Let cool for about 5 minutes after taking them out of the oven.

These cookies have a delicious soft center and a crispy outside. They almost taste like a cross between a cookie and brownie. They are super easy to make so I hope that you get a chance to enjoy them yourself!
